Food freezing is conducted through a process called cryogenic preservation or cryogenic freezing,
which is
done using liquid nitrogen (LIN) at -196C. The cryogenic preservation system, using either a
batch freezer
or a tunnel freezer, freezes the food much faster (almost instantly) and does not let ice
particles form,
thus maintaining the food structure. This process is also highly cost-effective, as large
quantities of food
products can be frozen at the same time.
